Morgan McGlone, and Nathan and Sali Sasi are onto a good thing. The trio recently opened Albion Street bar-restaurant combo Bessie’s and Bar Alma’s – a move which came off the back of the success of their hatted nearby eatery, Bar Copains.
Now, less than one month after the launch of the new venues, the team has announced it will take control of beloved Darlinghurst venue Bar Vincent. The decision came after the Bar Copains owners found out current owners Sarah Simm and Andy Logue were looking to take a break from the industry.
“Bar Vincent is without a doubt one of our favourite venues in Sydney and to have the opportunity to continue its incredible legacy is something we don’t take lightly,” the Bar Copains team shared on Instagram yesterday.
Bar Vincent established a name for itself by finessing the hospitality holy trinity: exceptional service, welcoming and cosy ambience, and high-quality food and wine.
The European bistro-style menu is regularly updated, hosting the likes of gnudi with cime di rapa, wild boar ragu with maltagliata, and risotto with nettles and prawn. Bar Vincent’s minimal intervention wine list is carefully curated, with a heavy lean towards local and Italian wines.
For the Bar Copains team, the goal isn’t to reinvent the wheel. Rather, they hope to make the transition between owners as seamless and unnoticeable as possible.
“Who knows – we may just convince Andy and Sarah to do the odd rockstar shift from time to time,” said the Bar Copains team.
