Internationally lauded restaurant L’Enclume is once again taking over Balmoral’s Bathers’ Pavilion for a multi-week residency.
It marks the restaurant’s second visit to Australia, after it sold out five weeks’ worth of sittings in 2023.
L’Enclume, located in Cartmel in Cumbria in Northern England, is recognised for its innovative farm-to-table dishes and sustainable practices. It is the only restaurant from the area to have received three Michelin stars. It also received the top rating of 99.50 on La Liste’s top 1000 restaurants of 2024.
Simon Rogan MBE, the celebrated mind and farm-to-table pioneer behind L’Enclume, holds a total of nine Michelin stars across his portfolio of restaurants – more than any other British restaurant group.
Rogan will return to Sydney for the residency from 16 July until 24 August, which will see 15 team members in total work alongside Bathers’ Pavilion Executive Chef Aaron Ward to deliver a 14-course tasting menu.
The tasting menu is priced at $590pp and includes snacks and petit fours. It’s an increase on the 2023 dining experience, which cost $420 per person. While course details are under wraps, the team has confirmed a variation of L’Enclume’s iconic Anvil dish will appear. The signature dish (which is also the namesake for the restaurant) is a caramel mousse with house-made miso, apple, and spruce.
“We want to take our L’Enclume expertise and create something entirely new – put it this way, if we had started L’Enclume in Sydney, this is what I would have created,” says Rogan.
The chef points out that Bathers’ Pavilion remains the only place outside Cartmel to serve a L’Enclume menu, due to “the depth of trust and collaboration we have in our relationship with Jess, Tom, and their exceptional team”.
Ward himself will be travelling to Cartmel next month to iron out the details. “I’ve worked with chefs all around the world and Aaron is without a doubt a standout and a leading talent to come out of Australia in recent years,” says Rogan.
Rogan has labelled Australian produce as “some of the best in the world”, and expects to showcase marron, snow crab, and “the best beef in the world”, alongside unique ingredients like quandong and wattle.
“We now have great relationships with many of the producers and growers and they are fully committed to working with us on specifically grown ingredients to ensure a truly traceable menu,” says the chef.
Group Head Sommelier Valentin Mouillard, a recipient of Michelin’s Sommelier of the Year Worldwide award, will develop a comprehensive list of wines and pairings which will range from $230 to $1200, alongside a non-alcoholic option for $120 per person.
“Our 2023 residency with L’Enclume surpassed all expectation,” says Bathers’ Pavilion co-owner and managing director Jessica Shirvington. “Our ongoing relationship with the Rogan Group… is something unique, integrated, and value-aligned. Our two teams from opposite sides of the world have worked so hard to come together seamlessly. We now have the advantage of a five-year relationship and we have every intention of upping the ante. I believe we have tapped into the best way to make fine dining the show-stopping event it is intended to be.”
