Rosemary Andrews – known for her viral dessert trolley with Ben Shewry and popular dessert box business – has announced she is opening a long-term, pop-up bakery Mietta by Rosemary in Malvern.
It’s been a long project for Andrews, who has been in search of the right location for her venue for the last two years while running her dessert box business via Instagram.
Andrews has worked across some of the country’s top venues including Ezard, Tivoli Road Bakery, and as head pastry chef of Attica Summer Camp alongside Ben Shewry.
Guests can expect all of Andrew’s signature treats at the pop-up, including the eight-layer carrot cake; negroni chocolate tart; and honey, espresso and dulce de leche layer cake.
Andrews says she is also working on a few new items for the menu.
“Bringing joy to people is one of the main reasons I love being a pastry chef. Mietta reflects my career and what I am about – quality, delicious cakes that deliver happiness,” says Andrews.
“Mietta is also a good opportunity to evolve from the Instagram platform to see how the community responds to a long-term bricks-and-mortar business. I have a six-month lease there and hopefully it will be a stepping stone to another property and my dream bakery.”
Design By Golden (Laurent Bakery, Moby 3143, Nine Yards) will be behind the venue’s design which is set to be a refined and elegant space that champions Andrew’s goods.
Mietta by Rosemary is slated to open in December, and will be located at 23 Glenferrie Road, Malvern, Victoria.
